Fluffy Quinoa Pancakes

Saturday morning. Kids are playing in their jammies. You’re sipping on a hot cup of coffee. And no one has to get ready for work or school today. It’s time to mix up a batch of Feasting on Fruit’s Fluffy Quinoa Pancakes. These pancakes are thick, healthy (thanks to the quinoa flour), and pair marvelously with fresh blueberries and maple syrup. I use my Blendtec blender to mix up the batter, then pour into a pan, cook, flip, and they’re ready to eat. Where can you buy quinoa flour? I picked up a bag at Sprout’s here in Redlands. I’m assuming most crunchy/healthy grocery stores carry it.

Kid approved? YES! Hannah (two and half years old) loves them.

Baby approved? YES! Parker can’t get enough of these pancakes. I only spread a little bit of Earth Balance vegan butter on them, no maple syrup for him yet. And I mush up the blueberries a bit. He started eating these pancakes at 9 months old.
