Irresistible Garlic Lentil Pasta

Garlic, vegan butter, lentil pasta, and more garlicthat’s all you need for this super easy, impossible to resist meal. This flavorful recipe for Garlic Lentil Pasta comes from Neurotic Mommy, and it’s so fast to prepare that you’ll find yourself making it quite often. (At least I do!) I use frozen garlic cubes, which saves time by eliminating the need to cut up and mince my own garlic. I simply toss the garlic, olive oil, butter, garlic powder, salt and pepper in a pan to cook for a few minutes, boil and drain the lentil pasta, then mix it all up. The recipe calls for red lentil pasta, but green lentil pasta or any other pasta can be swapped in too. You can steam broccoli or another vegetable to serve alongside or mix up with the pasta. And there you have it, a delicious plant-based dinner that comes together in twenty minutes that everyone in your family will like!

Baby approved? Yes! Parker loves just about any rendition of lentil pasta, and he started eating this meal at about 11 months old. If your baby isn’t used to garlic yet, you might want to mix up their pasta separately with only a small amount of the garlic sauce.
