Power Up Granola Bars

These Power Up Granola Bars are a chewy, sweet way to boost your energy. A mighty combination of oats, chia seeds, peanut butter, maple syrup, coconut oil, and a handful of chocolate chips make these bars a healthy, vegan, gluten-free snack for any age. I eat them when I need a quick post-run snack, I pack them for Hannah’s morning preschool snack, and my husband grabs them for his pre-workout afternoon snack. Can you tell we like to snack on these bars!?

The only change I made was to reduce the amount of chocolate chips from 1/2 cup to 1/4 cup, because my family tends to like things a little less sweet. And once the mixture is frozen, I cut it up into small squares and freeze them in a few small ziplock bags, that way they’re easy to grab and go.

Kid approved? YES! Hannah normally eats one small bar for a morning or afternoon snack. (Hannah is three years old.)

Baby approved? Not quite. Parker (12 months old) doesn’t have any molars yet, so I’m waiting to give him these granola bars since they are chewy. His alternate snack is usually a banana or some blueberries, which he happily eats!

Update: Parker is now 18 months old and he loves these granola bars! He has four molars and can chew them right up.
