Creamy smashed avocados, balsamic roasted tomatoes with garlic, black beans, and a scoop of white rice—a basic blend of ingredients for one remarkable burrito. This recipe was created by Savory Tooth and it has become tradition in my house. I follow the recipe, except I wrap my burritos in gluten-free tortillas and add a scoop of white rice to each one. Make sure you have ripe avocados, garlic, black beans, balsamic, and some cherry tomatoes on hand, and you’re ready to embark on a quest for these Legendary Guacamole Burritos.

Kid approved? Yes and no. The garlic is sometimes too strong for Hannah, so I simply give her scoops of beans, rice, and guacamole on her plate instead of wrapped up in a burrito. That way she can dip some chips and decide how much of the guacamole she wants to eat. Sometimes I’ll set aside a scoop of the guacamole and beans mixture (before I mix in the tomatoes and garlic) so she can enjoy the guacamole without picking out the tomatoes.
Baby approved? YES! Parker started eating scoops of the guacamole mix at 10 months old. He’s not quite ready for his own burrito yet!
