It’s creamy, a little bit sweet and orange thanks to the sweet potato, and you can mix it with any pasta you’d like. When preparing the sauce, it helps to use a high-powered blender (like a Blendtec or Vitamix) to blend all the ingredients until they are super smooth. As for pasta, I prefer Tolerant Foods’ Organic Green Lentil Pasta, that way I’m not loading my kids up with too many carbs and it’s gluten free. (We eat a lot of GF pasta and noodles over here!) I omitted the kale and instead steamed some broccoli to serve on the side. And wouldn’t you know, I did win the dinner olympics that night!
