My family used to eat a lot of eggs every week—way more eggs than I’d like to disclose. I loved scrambled eggs, but more importantly, my toddler loved them too. I needed a delicious replacement for our scrambled egg breakfasts, so I started researching tofu scramble recipes and decided it was time to make a change. After all, I really wanted to stop eating eggs and get my kids accustomed to healthier breakfast foods. So after a few trial runs of getting my tofu pressed and scrambled just right, I landed on It Doesn’t Taste Like Chicken’s tofu scramble spice combination. This recipe is tasty with all the veggies and beans, but lately I’ve been prepping my tofu scramble spices ahead of time and simply scrambling the tofu with the spices. If you don’t have time to chop all the veggies in the morning, as long as you have all the spices and extra firm tofu on hand, you’re set! I measure out all the spices ahead of time and store them in my Baby Bullet baby food containers. Parker is past the blended baby food stage, so these containers are getting a new life as tofu scramble spice holders.
Kid approved? YES! Hannah adores tofu, so this tofu scramble is always a hit. I keep my tofu scramble simple with only the tofu and spices, no veggies or beans mixed in. And I serve hash browns and fruit on the side.
