This is one of Hannah’s favorite meals—she requests beans and rice at least once a week, and it’s so easy! All you need is leftover rice, a can of pinto beans, tortilla chips, and whatever toppings your toddler likes. In my case, it’s salsa and avocados. I like to use pinto beans and smash them up a little bit.
Can this lunch be adapted for a baby? Yes! Parker (9 months old when he started eating these foods) eats the rice, beans, and avocados. No chips for him yet, but I can tell that he really wants to try them.
Kid approved? YES
Baby approved? YES, but stick with the beans, rice, and avocado. Hold off on chips and spicy foods.

- 1 can of pinto beans

Instructions
- Warm up the leftover rice.
- Warm up the pinto beans and smash them up. I usually drain about half of the liquid out of the can before I heat and smash.
- Serve with chips, salsa, and an avocado.
